Chef’s Menu Notes:
Rustic Chicken Soup: A perfect starter for those cold winter nights. Made with “free bird” (that’s the most sustainable, good for you chicken on the market) homemade chicken stock, fresh herbs and white beans, this soup is hearty, healthy and full of taste. This fresh soup starts when our culinary staff gets the birds, a mere two days after being butchered, from an Amish farm in Pennsylvania. Can’t get much fresher than that!
Grilled Elephant Trunk Sea Scallops: A hearty dish of scallops, on top of a “succotash” of winter vegetables. Succotash is a loose term used to describe a combination of vegetables (in this case, carrots, squash, turnips) similar to a hash, but with more liquid. Makes for a nice combination with the crunchy homemade bacon and herb butter.
Pineland Farms Never Ever” Beef Rib Eye: Rich in flavor and diverse in color and texture, this dish uses the Best Grade Quality Beef from Pennsylvania. This beef is raised from birth and never feed antibiotics, hormones or animal by-products...you’ll know when you taste it. This beef rib eye is served over a mélange of potato and baby root vegetables.
